• Cut veggies 
• 200 servings on 1/2 cup of 22 lb. 
• Immediately after cropping the vegetables are cleaned thoroughly, cut, blanched, shock frozen, sorted and packed IQF in storage palletizers 
• Cook the deep-frozen minestrone in a bit of salt water during 10 to 15 minutes 
• Store at -10°F to 0°F 
• Keep frozen until ready to use 
• When defrosted, do not freeze again
